With the fresh, zingy flavors of ginger, garlic, turmeric, and black pepper, this is a freezer meal that doesn't disappoint. Frozen flat for easy storage, it's easy to defrost and use as a base for many meals.
Jump to:
Tamari - Adds a savory, salty taste. Look for a tamari (or soy sauce) which is certified gluten-free. Coconut aminos also work.
Avocado oil - Helps the flavors infuse into the meat and aids browning. Can be swapped for melted coconut oil or light olive oil.
Ground turmeric - An anti-inflammatory spice with an earthy flavor and bright yellow color. You can also use finely grated, fresh turmeric instead.
Ginger - Adds a warming flavor. Fresh ginger can be hard to grate due to its fibrous texture - try freezing the whole piece of ginger and grating on a microplane, from frozen.
Garlic - Use fresh garlic for the best flavor. Pre-chopped can be used to speed up prep.
Black pepper - A compound called piperine in the black pepper helps with the absorption of the anti-inflammatory compounds in turmeric. Use freshly ground for the best flavor.
Ground turkey - A lean source of protein with mild flavor that takes on the warming flavors of the aromatics in this recipe. Ground chicken is a great swap, too.
Salt.
Step 1: Combine the tamari, avocado oil, turmeric, ginger, garlic, salt, and pepper in a gallon-size freezer bag. Seal and shake to mix.
Step 2: Add the ground meat to the bag, pressing out excess air before sealing.
Step 3: Massage the bag so the marinade is worked through the meat. Lay flat on a baking sheet and freeze until solid.
Step 4: When ready to cook, thaw fully in the refrigerator overnight, then cook in a skillet over medium-high heat, breaking up as it browns, until no longer pink.
Step 5: Serve over rice, cauliflower rice, or quinoa.

Variations
- Add sliced bell peppers and frozen edamame beans for a fiber boost.
- Swap ground turkey for lean ground beef or ground pork.
- For a vegan version, use crumbled firm tofu in place of turkey.
- Add diced kimchi and a splash of toasted sesame oil.
Recipe tips
- Freeze flattened ziploc bags of cooked rice or quinoa in 1-2 person servings. You can defrost these alongside the turkey bag to complete the meal.
- Squeezing as much air as possible out of the bag before sealing and freezing is the best way to prevent freezer burn.
- Don't re-freeze the turkey once it has been thawed.
Serving suggestions
- Serve over a starchy base of steamed jasmine rice, or stir-fry with cooked basmati rice.
- For a lower carb option, serve with cauliflower rice or spoon into gem lettuce leaves.
- Add toppings like diced avocado, sliced cucumber, green onions, or pickled carrots.
- Garnish with toasted sesame seeds, chili oil, chopped cilantro, or crispy shallots.
